Chocolate Cookie Crunch Breakfast Cookie

This one should give you that brownie-cookie feel without turning breakfast into dessert. It also gives you a lot more protein than a typical breakfast cookie.

Ingredients

  • 1 scoop Nutriplus Chocolate Cookie Crunch protein mix
  • 1 tablespoon Nutriplus Chocolate Collagen
  • 1/3 cup plain nonfat Greek yogurt
  • 1 egg white
  • 2 tablespoons old-fashioned oats, pulsed into flour or left whole
  • 1 teaspoon unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon vanilla
  • Pinch of sea salt
  • Sweetener to taste, optional
  • 1 teaspoon mini dark chocolate chips or cacao nibs, optional

Directions

  • Mix everything except the chocolate chips until you have a thick cookie dough.
  • Shape into one large cookie on parchment paper.
  • Press a few mini chocolate chips into the top if using.
  • Bake at 350°F for about 10 to 12 minutes.
  • Let it sit for a couple of minutes before eating. The center should stay soft, almost brownie-like.
  • For an air fryer, try 350°F for about 7 to 9 minutes and check it early.
