Ingredients:
• 4 scoops Cookie Crunch protein mix (Tap Here for Cookie Crunch Protein)
• 4 oz reduced-fat cream cheese, softened
• 1/3 cup powdered peanut butter
• 1 to 2 tbsp unsweetened almond milk, only if needed
• 1/2 tsp vanilla
• Pinch of sea salt
• 2 tbsp sugar-free mini chocolate chips, optional
For the coating:
• 1/3 cup sugar-free dark chocolate chips
• 1 tsp coconut oil
- Directions:
Mix the cream cheese, protein mix, powdered peanut butter, vanilla, and salt until thick. - Add almond milk 1 teaspoon at a time only if the mixture is too dry.
- Fold in the mini chocolate chips if using.
- Chill for 20 to 30 minutes.
- Roll into small truffle-sized balls.
- Melt the chocolate with coconut oil and either dip each truffle or drizzle it over the top.
- Refrigerate until firm.
My tip:
Keep these SMALL. Think chocolate truffle, not giant energy ball. You get the sweet bite without turning it into a 300-calorie “healthy snack.” 😂
To make them even higher protein:
Add another 1/2 scoop of Cookie Crunch mix. If they get too dry, add a teaspoon of almond milk.
To lower the carbs even more:
Skip the chocolate chips inside and just drizzle a little melted sugar-free chocolate over the tops.
